Rye is an annual or biennial herbaceous plant, a species of the genus Rye in the bluegrass family (Cereals). Rye can be called a native Russian cereal. It is the most important food and fodder crop for many peoples. This cereal is an excellent dietary product, it is used to prepare many useful and, no less importantly, tasty dishes, such as the well-known rye bread, cakes, kvass, cereal and much more. Rye is used for the production of starch and alcohol, as well as a forage crop.
Rye is a close relative of wheat, but is much more useful than the latter. Its protein contains much more valuable amino acids (lysine and threonine), and the grains contain much less gluten. Rye flour has five times more fructose than wheat flour. And products made from it are rich in hemicellulose and fiber, which improve microflora, increase intestinal peristalsis and strengthen the immune system. Rye has a rich complex of vitamins and trace elements, as well as antioxidants that have anti-inflammatory and anti-allergenic effects. Rye products improve hematopoiesis and have a beneficial effect on the cardiovascular system.
